Our Entrees are made fresh every day, no exceptions to this for any reason. With a few exceptions we make all food from scratch, current exceptions include, Johnsonville Sausage, Lasagna Noodles, Olives, Tomato’s and Tomato’s Sauce. In the near future, we plan on using fresh Tomato’s and Tomato Sauce. The items that we do purchase and do not make fresh are for two reasons, the Johnsonville Sausage are the best in our opinion and the Lasagna Noodles would result in a cost and time increase that we do not feel warrants our time, or the additional cost to our customers. Again, we use noodles that are of the highest quality, specifically Barilla lasagna Noodles. It is possible these same noodles are available in a generic brand name — we have not had luck finding them. The items listed below will not all be available every day, Susie's plan is to have two or three entries available every time we work our Food Trailer.
Baby Back Rib Meal

Our Baby Back Ribs are prepare using our own dry rub and then slow roasted for hours at a low temperature setting. While our ribs are not bar–b–que we do use a bar–b–ques sauce, we offer mild, somewhat spicy, or no sauce at all – this will be added at our customer’s request. Up to now, we have always used a mild sauce, so developing a spicy sauce is challenging. To accompany these ribs we have always included wild grain rice, we have a fryer so we are planning on using fresh cut French fries. We will probably switch between the two to see what our clients prefer. Our meal will end with one of our available desserts offered that day. It could be cheesecake cupcake, or one of our regular cupcakes, or a chocolate éclair. It will be our customer’s choice, depending on what we have baked for that day. Miniature apple pies, or regular ⁄ half pan sized desserts will not be part of any meal.
Baby Back Ribs ala Carte
This option is the same as our Baby Back Rib Meal; it just does not include dessert.
Chicken on a Stick Meal

A family favorite for over forty years, this is two seven inch skewers of chicken breast cut into bite sized pieces. These skewers are then mildly marinated in soy sauce and a few other spices. Cooked to perfection, this dish is often liked by young and old. We will probably switch between the two to see what our clients prefer. Our meal will end with one of our available desserts offered that day. It could be cheesecake cupcake, or one of our regular cupcakes, or a chocolate éclair. It will be our customer’s choice, depending on what we have baked for that day. Spaghetti ala Carte
Spagetti with Meat Sauce, Seasoned Bread.
We use our Lasgana Sauce which changes up what many people think of boring spagetti sauce. Our seasoned bread is not garlic bread, even if it is close.
